CLINTON NOVEMBER EVALUATION

-Buffalo Chicken and Chicken Strips were out of date in bane. Food can only be 48 hours old. Please DO NOT over prep.
-Open bags of sauce (buffalo, mayo) did not have a date on them. We need to start dating any open sauce bags in fridge.
-Menu boards were very dirty with oven grease buildup. Managers make sure these are least getting cleaned every window change with oven cleaner. And employees are assigned to clean every few weeks.
-ALL flatbread sandwiches need to be wrapped into pouches. This includes footlong sandwiches. They need to be wrapped into TWO six inch pouches.
-Cutting boards are yellowed new ones need to be ordered.
-There were missing days on the temp log. Openers and Closers, please help remind your short shifters to make sure temps are getting done before they leave. If any temps are out of range (41*-140*)  The action log on back of temp log MUST BE FILLED OUT! If food is out a range let a manager know!
-Hand washing sticker in bathroom is worn and peeling. (Plaque hand washing sign might be helpful/ new towel dispenser.)
-There was a handwritten price for up-charge of yogurt on the menu board. Subway doesn’t allow anything to be handwritten. Needs to be replaced with stickers. Avocado needs to be added to the extras section of the menu board.
-Chicken breast is being filled with water when heated in microwave. Don’t let water touch the chicken. Make sure hot bane has plenty of water and there are two pan liners under chicken.
-Avocado is being squeezed from the bag instead of in a cambro and being portioned with scoop. Do not SQUEEZE from the bag!
-Cooked Chicken breast and meatballs need to be heated to 165* before putting in hot-well.
Sandwiches need to be neater. If you are having problems folding sandwiches and veggies are falling out when you pick up to wrap, you are putting to many veggies on the sandwich. There are 3 of each veggie on a six inch sandwich. Also make sure nothing is in fold of sandwich- meat, cheese, or veggies. This will make it harder to close. Make sure you are cutting bread using a diagonal hinge cut. Managers and shift leaders please watch this and critique crew.
-Several ceiling tiles in dining room had water stains, need to be replaced.
